What is Artichoke Vinegar?

Aksuvital Artichoke Vinegar is a type of vinegar obtained through the natural fermentation process of artichokes harvested in season. Commercial accelerated fermentation methods are not used. In production, high heat treatment is not applied to the fruit or plant; the product is left to ferment in its natural process. It is a vinegar produced by additive-free and natural methods, containing beneficial microorganisms formed with natural vinegar culture during the fermentation process.

It is produced through traditional natural fermentation. Therefore, especially after the cap is opened, as long as it is exposed to air, sediment, color change, and a transparent layer called "Mother of Vinegar" may form on the vinegar surface. These are not signs of spoilage, and the vinegar can be used again after straining. This indicates that fermentation is ongoing and that the vinegar is not pasteurized or filtered.
